Ingredients:

  • 2 lbs chicken thighs (rinsed with vinegar and water)
  • 1 Tbsp curry powder (for marinating)
  • 1.5 Tbsp curry powder (for cooking/”burning”)
  • 1 tsp Johnnyโ€™s seasoning (plus more to taste)
  • 1 medium onion, chopped
  • 2โ€“3 green onions, chopped
  • 1 green bell pepper, chopped
  • 2โ€“3 garlic cloves, chopped
  • 2โ€“3 sprigs fresh thyme
  • 1 habanero pepper, chopped (optional)
  • 1 medium potato, chopped
  • 3 Tbsp cooking oil
  • ยผ cup water

Instructions  

  1.  Rinse 2 lbs chicken thighs w/ vinegar + water.
  2.   Add ingredients to chieken 
    • 1 Tbsp curry powder
    • 1 tsp Johnny seasoning
    • Add Veggies
      • Chopped onion,
      • green onion,
      • green pepper,
      • garlic,
      • Thyme,
      • OPTIONAL: 1 chopped habanero
  3.    Marinate 1 hr or overnight.
  4.     Remove veggies from chicken & set aside.
  5.     Heat 3 Tbsp oil, โ€œburnโ€ 1.5 Tbsp curry powder (30 secs).
  6.     Add veggies, cook till soft (3โ€“5 min).
  7.     Add chicken + ยผ cup water. Cover, cook 30โ€“35 min on med-low.
  8.     Add 1 chopped potato w/15 min left.
  9.     Johnny to taste. Done when chicken is tender + potato soft.
  10. Serve w/ rice or cabbage.
  11. Enjoy!

Tip: Only use ยผ cup waterโ€”curry makes its own gravy!
