Ingredients:
- 2 lbs chicken thighs (rinsed with vinegar and water)
- 1 Tbsp curry powder (for marinating)
- 1.5 Tbsp curry powder (for cooking/”burning”)
- 1 tsp Johnnyโs seasoning (plus more to taste)
- 1 medium onion, chopped
- 2โ3 green onions, chopped
- 1 green bell pepper, chopped
- 2โ3 garlic cloves, chopped
- 2โ3 sprigs fresh thyme
- 1 habanero pepper, chopped (optional)
- 1 medium potato, chopped
- 3 Tbsp cooking oil
- ยผ cup water
Instructions
- Rinse 2 lbs chicken thighs w/ vinegar + water.
- Add ingredients to chieken
- 1 Tbsp curry powder
- 1 tsp Johnny seasoning
- Add Veggies
- Chopped onion,
- green onion,
- green pepper,
- garlic,
- Thyme,
- OPTIONAL: 1 chopped habanero
- Marinate 1 hr or overnight.
- Remove veggies from chicken & set aside.
- Heat 3 Tbsp oil, โburnโ 1.5 Tbsp curry powder (30 secs).
- Add veggies, cook till soft (3โ5 min).
- Add chicken + ยผ cup water. Cover, cook 30โ35 min on med-low.
- Add 1 chopped potato w/15 min left.
- Johnny to taste. Done when chicken is tender + potato soft.
- Serve w/ rice or cabbage.
- Enjoy!
Tip: Only use ยผ cup waterโcurry makes its own gravy!
